This April, we invite you to join us in celebrating 16 years of William Chris Vineyards with a special Anniversary Dinner in the Hye Society Members Lounge.
The evening will feature a thoughtfully prepared five-course plated dinner, each course paired with exceptional wines from our cellar. This intimate gathering is a chance to slow down, share a table, and celebrate the people, vineyards, and wines that have shaped William Chris over the past sixteen years.
Throughout the evening, you’ll enjoy curated wine pairings and the opportunity to spend time with our co-founders and winemaking team as we look back on the journey so far and raise a glass to what’s ahead.
Dinner Menu Highlights
Gulf Coast Crudo
Delicately sliced Gulf Coast crudo presented with vibrant Cara Cara orange, fragrant fennel pollen, and a drizzle of early harvest olive oil, finished with bright pickled Fresno chile and a scattering of fresh micro herbs.
White Asparagus Velouté
A silky white asparagus velouté topped with a flame-kissed quail egg, accented with aromatic chive oil and a delicate brioche crumble for texture.
Olive Oil–Poached Halibut
Tender halibut gently poached in olive oil and served with classic artichoke barigoule, sweet spring fava beans, fragrant saffron nage, and preserved lemon for a touch of brightness.
Wagyu Osso Buco
Slow-braised Wagyu osso buco accompanied by velvety celeriac purée and braised young leeks, finished with a deeply flavorful jus and bright parsley gremolata.
Pistachio Financier
A delicate pistachio financier served with rose-scented mascarpone cream, jewel-toned compressed berries, and crisp pistachio praline.
