Tasting Notes
Layered and rich in aroma with concentrated pear and unripe pineapple, freshly whipped cream notes, and a wealth of high-end spices such as saffron and candied ginger. The palate is medium in body with texture and well-balanced acidity. Extra Brut (minimal dosage).
Winemaking
Picked early for freshness. Fermented and aged shortly in stainless steel tank. Fermented a second time in bottle with 16 months on the lees. Disgorged on 5/2/25 with 2 g/L of dosage. Method: Traditional. Dosage: Extra Brut. Closure: Mushroom cork and cage.

Pair with classic foods such as caviar, oysters and French cheeses such as Brie, Camembert or Gruyère.
The Vineyard
Boxing Rabbit Vineyard AVA: Texas High Plains Planted in 1975 by Andy Martin, Martin's Vineyard identifies itself as the oldest continuously running commercial vineyard in Texas. Today it is called Boxing Rabbit Vineyard, and has 30+ acres planted to eleven grape varieties. Current owners Preston and Kelly Alison are reviving these old vines to ensure they can express their maturity through wine.
