Tasting Notes
Aromas of tropical fruit, florals, grass, citrus, and toasty characters add depth from the partial bottle fermentation process. Flavors of brioche, serious minerality, and hints of herb play through apple notes on the palate. Just under medium-bodied, and fully dry.
Winemaking
Hand-picked early in the season to preserve natural acidity. Whole cluster pressed. Bottled at the end of fermentation to capture natural carbonation. Undisgorged. Method: Ancestral.
Food Pairing
Pair with intense seafood and refreshing chicken dishes, especially with citrus, herb, and vegetables.
The Vineyard
AVA: Texas High Plains
Originally Martin Vineyard, Boxing Rabbit Vineyard was planted in 1975 by Andy Martin and identifies itself as the oldest continuously running commercial vineyard in Texas. Today, there are over 30 acres planted to 11 grape varieties. Current owners Preston and Kelly Alison are reviving these old vines to ensure they can express their maturity through wine.
