Tasting Notes
Pepper, violets and red plum notes intertwine with fragrant cedar, rose-hip, and walnut. The palate has powerful tannins and lifted acidity that allows for the flavors of plum and bramble berries to ride through in to a firm, lengthy finish. Dry, full-bodied, with no hint of heat until the very end.
Winemaking
Varieties: 100% Merlot
Fermented in concrete vessel for 16 days with ambient yeast. Aged in concrete vessel for 10 months before aging further for 6 months in neutral French oak barrels.
Serve at 59°F | Decant

game bird, especially when paired with a citrus or herb component, such as orange or rosemary.
The Vineyard
AVA: Texas Hill Country
Formerly Hoover Valley Vineyard, this vineyard was renamed to represent the spirit of our industry, as well as the ancient geological feature it is located on the Llano Uplift. This feature is a product of magmatic eruption and erosion that exposed the hardened granite beneath, which appear uplifted after it all. These 55 acres of southern French and Mediterranean grape varieties were planted in the Hoover's Valley in 2013.
Elevation: 1,500 ft. Soil: Decomposed granite. Vines planted in 2017.
