Tasting Notes
The subtle nose opens with cracked pepper, dried strawberry, cranberry tart, and blueberry preserves, rounded by dried rose-hip, herbs, orange peel, chalk and stone. The refreshing palate brings out fresher fruit on a medium body.
Winemaking
Variety: 33% Grenache, 20% Cinsaut, 20% Mourvèdre, 18% Carignan, 9% Petit Verdot. Fermented in stainless steel and concrete for an average of 10 days, with 10% extended maceration. Aged for 25 months in 30% new French oak barrels, 70% neutral French oak barrels.
Food Pairing
Turkey and other mild poultry, a salt component to boost the body of this wine, and roasted nuts will coax out the subtle notes of this wine.
The Vineyard
La Pradera Vineyard, Texas High Plains AVA. Established in 2010 by Mike and Barbara Paddack with the help of Texas grape-growers Andy and Lauren Timmons, who also currently manage the 120 acres. The different grape varieties are planted on a special soil combination that is calcareous, organic, sandy loam over limestone that is just 2-3 feet deep in some blocks. The wines are aromatic and fresh in style.
Elevation: 3,300 ft. Soil: Amarillo fine sandy loam over limestone base. Age of vines: 10 years.
