Tasting Notes
Vibrant with lime zest on the nose, white peach, and a zesty-ness that won't quit! Classic notes of lemongrass, nectarine, lime, and stone roll together onto a delightfully bubbly palate. The bubbles are aggressive and will hold the wine until sophisticated nutty notes emerge. Light-bodied.
Winemaking
100% Blanc du Bois
All fermented in separate lots in stainless steel tanks for 12 -38 days. Aged in separate lots in neutral oak barrels for 2 - 18 months before blending into a neutral barrel for 3 more months.

The Vineyard
Fleming Farms Vineyard, Darst Ranch Vineyard, John Dale VineyardSituated outside of any currently defined AVA is the Texas Gulf Coastal region where many acres of hybrid and native grapevines thrive. In this region of Texas, Blanc du Bois is king due to its resilience in humid conditions, which is a trait from its southern-U.S. heritage. Each of these vineyards is just a couple of acres dedicated mostly to this single grape.
