Tasting Notes
Tropical and ripe citrus notes interwoven on the aroma with acacia, honeysuckle, white almond slivers, and even lavender. The palate is a muddle of creamy texture, toasted cereal notes, and a bright, lingering finish. Dry, medium-bodied.
Winemaking
Fermented in large oak fermenters for 32 days. Stirred on the lees for 4 months. Sauvignon Blanc aged in oak fermenter for 5 months, Semillon for 4 months in neutral oak barrels.
Food Pairing
Powerful cheeses and Asian cuisine, as well as flavorful seafood dishes.
The Vineyard
Planted in 1987, the over 35-year-old Sauvignon Blanc vines at Dell Valley Vineyard are deeply rooted in the sandy, caliche soils of West Texas. Soil: sandy loam over caliche and ancient river rock. Elevation: 3,750 ft.
