Tasting Notes
Velvety red and black fruit preserve aromas, with a touch of tart blueberry. Zesty herbs are balanced by potent rose and cinnamon bark undertones. A fruit punch quality, yet completely dry, with a solid frame of tannins.
Winemaking
Fermented in a combination of stainless steel tank and large oak fermenter. Aged in neutral oak barrels and stainless steel tank for 20 months before bottling.
Food Pairing
Pork chops, whipped cheesy potatoes, or cheddar cheese with cured meat.

Dell Valley Vineyard, Lahey Vineyard, La Pradera Vineyard, Timmons Estate Vineyard, Lost Draw Vineyard
Hudspeth, Terry and Lubbock counties. Over 3,000 ft elevation and dry conditions across the vineyards; cool nights retain freshness while high sunshine concentrates flavor. Soil: sandy loam over caliche with river rock; Amarillo fine sandy loam over limestone. Elevation: 3,100-3,750 ft.
