Tasting Notes
A rich aroma of herbs and juniper, with chocolate covered cherry, pomegranate, and hints of maplewood. Deep stone and earth round out the highly structured palate. The tannins slowly melt away as the fruit lingers. Full body. Dry.
Winemaking
Fermented in stainless steel tank for 15 days. Aged in 25% new French oak barrels and 75% neutral oak barrels for 18 months.
Food Pairing
Braised meats, cheddar cheese, and tomato-based dishes such as lasagna.
The Vineyard
Originally planted in 1987, the vines at Dell Valley Vineyard are deeply rooted in the sloped sandy, caliche type soils of West Texas. Sitting outside of any designated American Viticultural Area, this vineyard is tended by Phillipe, whose experience with growing grapevines began at an early age on the French island of Corsica. Soil: sandy loam over caliche with river rock. Elevation: 3,750 ft.
