Tasting Notes
Very ripe red and black fruit aromas with hints of dried roses and tobacco. Dry, smoky finish.
Winemaking
Fermented with 15% wild yeast. Extended maceration for 30% for 24 days. Aged 16 months in 35% new French oak and 65% neutral oak barrels. Stirred on the lees for 8 months.
Food Pairing
A versatile wine that can stand up to filet mignon, and then slum it next to potato chips and tacos.
