Tasting Notes

A refreshing, flinty-floral perfume complemented by warmer scents of tropical fruit and toastiness. Light on the palate, but round and generous, with a salty-stone finish that leaves the wine pleasantly dry.

Winemaking

Fermented in a combination of large oak fermenter, concrete egg, and French oak barrel for 28 days. Aged in the same vessels for 6 months prior to blending and bottling. Partial malolactic conversion.

Food Pairing

Grilled fish, lemon cream sauces, chicken-pineapple-onion skewers, and Brie cheese.
