Tasting Notes

Tropical fruit, fresh cream, and warm spices create intensity, and a flower petal oil provides an elegant baseline. The palate is round and creamy, with a lift that entices another sip. Old vine Sauvignon Blanc grown in Texas.

Winemaking

Fermented in a concrete egg, oak barrel, and stainless steel tank for an average of 30 days. Partial malolactic conversion. Aged 5 months in its various vessels.

Food Pairing

Chicken and pork dishes, curried vegetables, and semi- to firm cow's milk cheeses.

The Vineyard

Planted in 1987, the over 37-year-old Sauvignon Blanc vines at Dell Valley Vineyard are deeply rooted in sandy, caliche soils. Soil: sandy loam over caliche with layers of clay and river rock. Elevation: 3,750 ft.
