Tasting Notes

Heady with black cherry porter notes, black pepper, sweet leather, Earl Grey tea with cream, and figgy pudding! Deep and dark, with wild berries throughout, and a charred meat depth. This lusciously sweet wine has loads of character, and a tart bite just like a fresh strawberry.

Winemaking

Variety: 100% Black Spanish

Macerated with the skins for a few days at warm temperatures. Fermentation was stopped by the addition of brandy. The wine was aged in neutral French oak barrels for eight years. Unfiltered for longevity.

The Vineyard

AVA: Bandera County

Polvadeau Vineyard, also known as Slaughter Vineyard, specializes in growing the Black Spanish grape. Established in 2006 in Vanderpool, Texas, it is situated in the Sabinal Canyon along the Sabinal River. Tom and Glenda Slaughter own and run the 15 acres, which were granted to Glenda's family (the Polvadeaus) before Texas became a state. 

Polvadeau Vineyard, Bandera County. Age of Vines: 9 years. Soil Type: Exposed limestone bedrock with silty clay, gravel and clay loam. Elevation: 1,575 ft.
