Tasting Notes
Romantic aromas of oyster shell, blooming flowers, white almond, magnolia oil, lemon tart, pastry dough, and petrichor (rain on dry ground or concrete). The palate is medium bodied with a hypnotizing texture that glides slowly but remains tight from the salty acidity. Dry.
Winemaking
Fermented in large oak fermenter at 55°F for a slow 21 days. Aged in large oak fermenter for 6 months and stainless steel tank for 2 more. Partial malolactic conversion.
Food Pairing
Pair with white fish or scallops, light buttery dishes, fresh herb seasonings, and spicy cuisine.
The Vineyard
Dell Valley Vineyard. Continually planted since 1987, the vines at Dell Valley are deeply rooted in sloped sandy, caliche soils at over 3,500 ft elevation. Sitting next to vast alfalfa fields outside of any currently designated American Viticultural Area, the vines are mightily tended by Philipe, whose experience with growing grapevines began at an early age on the French island of Corsica.
