Tasting Notes
A funnel of aromas that strike a woodsy tone immediately, but not from oak barrel aging. Smells of elderberry, jasmine, juniper, evergreen, thistle, and white cherry. The wine's acidity is so vibrant, but varily matched by hugging fruitiness on the palate that holds you in.
Winemaking
Fermented with New Zealand yeast in stainless steel tank. Aged for 6 months in two lots: half in 20% new French oak barrels and 80% neutral barrels, and the other half in stainless steel tank.
Food Pairing
Pair with something well chosen and simple such as a Tomme cheese, skate with beurre blanc, or onion tartlet.
The Vineyard
Boxing Rabbit Vineyard. Boxing Rabbit Vineyard is 30 acres with 11 grape varieties. Founded in 1975 as Martin’s Vineyard, it is the oldest continually operating commercial vineyard in Texas. In 2020, Preston and Kelly Alison took over the vineyard, giving the land its new name and still fighting today to renew the old vines planted there. Bright, well drained red sandy soil keeps the vines thriving.
