Tasting Notes

Dichotomous aromas of jolly rancher and crushed stone - both serious and thirst-quenching at the same time. The wine smells of watermelons and strawberries, a sprig of mint, and the sea. The palate is deliciously dry, with a subtly chalky texture, and calm, candied fruit finish.

Winemaking

Fermented in stainless steel tank at a cool 55°F for 20 days. Aged in stainless steel tank for a quick 6 months before bottling.

Food Pairing

Pair with crawfish, spicy Thai food, and pork meatballs where it will cut through the richness.

The Vineyard

La Pradera Vineyard. Established in 2010 by Mike and Barbara Paddack with the help of Texas grape-growers Andy and Lauren Timmons, who also currently manage the 120 acres. The different grape varieties are planted on a special soil combination that is calcareous, organic, sandyloam over limestone that is just 2-3 feet deep in some blocks. The wines are aromatic and fresh in style.

La Pradera Vineyard, Terry County. Age of Vines: 15 years. Soil Type: Amarillo fine sandy loam over limestone base. Elevation: 3,300 ft.
