Tasting Notes
Highly aromatic, with a perfume of white and yellow flowers, the enticing aroma of grass, and juicy peach, white pineapple, and crème fraîche. Dry and light-bodied, though the palate has a roundness that creates a dynamic contrast to the lean minerality and bright acidity.
Winemaking
Varieties: 30% Muscat Blanc, 26% Malvasia Bianca, 22% Sauvignon Blanc, 12% Semillon, 10% Blanc du Bois
The Moscato Giallo and Malvasia Bianca were fermented and aged separately in stainless steel tank, and the Sauvignon Blanc, Semillon, and Blanc du Bois were aged separately in 100% neutral oak barrel. The Sauvignon Blanc went through partial malolactic conversion and less stirring for added weight and texture.

This wine sources grapes from three corners of the state of Texas, from the Gulf Coast region to far West Texas in the Chihuahua desert. The high elevation out West is prime for encouraging balanced acidity, while Darst Ranch and John Dale Vineyards are planted solely to Blanc du Bois, which can withstand the rainy, humid, and warm conditions there.
