Tasting Notes
A perfume of crisp white peach, a freesia and honeysuckle bouquet, and a palate that is taught and chalky, giving a subtle tingling sensation. The flavors float past the tongue, feeling airy and lifted, but still seriously focused. Dry, with a silky, light body, and lingering finish.
Winemaking
Fermented in stainless steel tank at a cool 58°F to retain freshness. Aged in stainless steel tank for 8 months.
Food Pairing
Pair with shellfish such as clams, briny young cheeses, Thai noodle soups, and tempura.
The Vineyard
Continually planted since 1987, the vines at Dell Valley are deeply rooted in sloped sandy, caliche soils at over 3,500 ft elevation. Sitting next to vast alfalfa fields outside of any currently designated American Viticultural Area, the vines are mightily tended by Philipe, whose experience with growing grapevines began at an early age on the French island of Corsica.
