Winemaking

Fermented in a stainless steel tank and oak barrique for an average of 28 days. Aged in 30% new French oak barrels and 70% neutral oak barrels for 7 months.

Food Pairing

Pair with light chicken dishes, rich seafood such as bass, and soft-shell crab.

The Vineyard

La Pradera Vineyard AVA: Texas High Plains Established in 2010 by Mike and Barbara Paddack with the help of Texas grape-growers Andy and Lauren Timmons, who also currently manage the 120 acres. The 13 different grape varieties are planted on a special soil combination that is calcareous, organic, sandy loam over limestone that is just 2-3 feet deep in some blocks. The wines are aromatic and fresh in style.
