Tasting Notes

Fragrant as soon as the bottle is opened, this is a charming wine with aromas of a basket of berries, sprigs of wild herbs, dried rose and cinnamon tea, and earthy bergamot. The wine is good at room temperature or cooler, but with the weight and acidity to deserve bold food!

Winemaking

Fermented separately. 70% stainless steel tank, 30% large oak fermenter. Aged 16 months in 20% new French/5% E. European oak barrels, 70% neutral oak puncheons. Blended 2 months prior to bottling.

Food Pairing

Pair with savory dishes (such as smoked game), cooked green vegetables, glazed ribs, and chili spice.

The Vineyard

AVA: Texas High Plains

Established in 2010 by Mike and Barbara Paddack with the help of Texas grape-growers Andy and Lauren Timmons, who also currently manage the 120 acres. The different grape varieties are planted on a special soil combination that is calcareous, organic sandy loam over limestone that is just 2-3 feet deep in some blocks. The wines are aromatic and fresh in style.

La Pradera Vineyard, Terry County, Texas High Plains AVA. Age of Vines: 13 years. Soil Type: Amarillo fine sandy loam over limestone base. Elevation: 3,300 ft.
