Tasting Notes
Citrusy, with an overall tropical-passion fruit and red berries aroma medley. Mandarin orange mingles with a lime-y mineral note. The palate feels chalky and nicely dry but still gushing with a mouth-watering citrus-red-apple-raspberry-punch flavor. Light-bodied, but with texture.
Winemaking
Picked early to retain acidity. The varieties were co-fermented in stainless steel tank for 29 days at a cool 53°F. Bottled at the end of fermentation to capture natural carbonation. Undisgorged.
Food Pairing
Pair with meatballs and other Italian dishes, soft and fresh cheeses, and anything spicy.
The Vineyard
La Pradera Vineyard AVA: Texas High Plains Established in 2010 by Mike and Barbara Paddack with the help of Texas grape-growers Andy and Lauren Timmons, who also currently manage the 120 acres. The 13 different grape varieties are planted on a special soil combination that is calcareous, organic, sandy loam over limestone that is just 2-3 feet deep in some blocks. The wines are aromatic and fresh in style.
