Tasting Notes

Initially cherry-chocolate bar, that sweet fruit aroma opens up into grilled plum, warm cedar, and an undercurrent of aromatic herbs. The palate a concentrated grip of thyme and cinnamon held there by a strong framework of tannins. Nicely dry, with a lingering fruitiness on a full body.

Winemaking

Fermented in stainless steel tank and large oak fermenter for 12 days. Preliminary blending was done after 6 months resting. Matured for 18 months in 20% new French oak barrels and 80% neutral barrels.

Food Pairing

Pair with a classic ribeye, herbed lamb lollipops, meat-lovers pizza, and savory Italian herb dishes.

The Vineyard

Hunter Vineyard, Terry County. Planted in 1986 for Jacque and Eunice Hunter by their neighbor's son, William Blackmon, the Hunter Vineyard is now one of the oldest active vineyards in Terry County. In the beginning, Bill planted Cabernet Sauvignon, but 10 years later Bill elected to replace the Cabernet Sauvignon vines with a tolerant clone of Merlot (3).

Hunter Family Vineyard, Terry County. Age of Vines: 28 years. Soil Type: Amarillo fine sandy loam over clay base with calcareous sub-soil. Elevation: 3,300 ft.
