Tasting Notes
Beautifully plush, floral, and boozy to some extent - this wine may be pale in color, but it is not shy in aroma or flavor! Medium-bodied, and pleasantly dry, with a fine overlay of tannins that keep the wine "lifted." It toes the line between extravagant and elegant. Chill slightly and decant.
Winemaking
Picked multiple times over a week or two for layers. Fermented in large oak fermenter for 12 days. Aged for 19 months in 15% custom new hybrid French oak barrels with E. European oak barrel heads.
Food Pairing
Pair with juicy braised meat dishes, fall-off-the-bone ribs, and hearty grain-based dishes.
The Vineyard
Vintage Press Vineyard, Gillespie County. In 2017 Johnny Sanchez and father-in-law Doug Wilcox planted 12 acres of Grenache, Mourvèdre, Syrah, and Tannat a stone's throw from Hye in Stonewall, Texas, home to the limestone layers that run through the old Pedernales River Basin.
