Tasting Notes

Richly aromatic and generously spiced, the smell of this wine evokes the relationship between the land and food – savory and earthy, with violet and tobacco, black plum and leather. The palate is just as generous, with a full, dry body, and incredible structure and length.

Winemaking

Fermented in concrete cube and aged in concrete globe for one month. Aged 24 months more in 25% new and 75% neutral French oak barrels.

Food Pairing

Pair with grilled red meat such as elk, dishes with Mediterranean herbs, chorizo, and aged cheeses.

The Vineyard

Established in 2010 by Mike and Barbara Paddack with the help of Texas grape-growers Andy and Lauren Timmons, who also currently manage the 120 acres. The different grape varieties are planted on a special soil combination that is calcareous, organic, sandy loam over limestone that is just 2-3 feet deep in some blocks. The wines are aromatic and fresh in style. Soil: Amarillo fine sandy loam over limestone base. Elevation: 3,300 ft.
