Tasting Notes
Deeply fruity on the nose, but it opens up impressively. A thick veil of black and purple berries lifts off to reveal a core of rosehip, lavender, wild mint, granite, black cherry, and hints of rhubarb. The tannins are impressive, as is the acidity, which will ensure lengthy development.
Winemaking
Fermented by variety for 12 days. Held in barrel for 6 months before preliminary blending. ¼ of blended lots went into new French oak barrel and ¾ in neutral barrel for 10 months before final blending.
Food Pairing
Pair with smoked game bird or venison, root vegetables cooked in butter, and nutty Gruyere.

Fovel Family Vineyard, Blackmon Ranch Vineyard. The Texas Hill Country is the largest of the eight American Viticultural Areas of Texas, spanning 9 million acres. With diverse soil types and bedrock, including both limestone and granite, and varying elevations, the potential for this region is magnificent as long as the varieties planted are resilient against the Hill Country's signature warmth and humidity.
