Tasting Notes
Deep and powerful aromas of leather, boysenberry, and black cherry liqueur lead into a dry, full-bodied palate. The wine reveals mysterious flavors of sweet herbs, bell and black pepper, spicy anise, and muddled violet. The tannins give great tension but are balanced by the fruitiness.
Winemaking
Co-fermentation of Cabernet Franc and Cabernet Sauvignon in stainless steel tank. Aged in 100% neutral oak barrels for 18 months.
Food Pairing
Pair with very savory meats like roast game, especially with herbs, marinated meats, and aged cheeses.
The Vineyard
Dell Valley Vineyard, Hudspeth County. Part of the Vineyard Blend Series, created to showcase the unique character and stories of select exceptional single-vineyard sites in Texas. The remote Dell Valley Vineyard sits below the highest peak in Texas - Guadalupe Peak. Originally planted in 1987, the vines are thick and deeply rooted in the sloped sandy, caliche type soils of West Texas. Sitting outside of any currently designated American Viticultural Area (AVA), this vineyard is tended by Phillipe, whose experience with growing grapevines began at an early age on the French island of Corsica.
Dell Valley Vineyard, Hudspeth County (none, outside any designated AVA). Age of Vines: 37 years. Soil Type: Sandy loam over caliche with river rock. Elevation: 3,750 feet.
