Tasting Notes
A wealth of citrus and orchard fruit character alongside cool slate minerality and subtle pressed wildflower notes, all framed by crisp, cooling acidity. (Review by Jonathan Cristaldi; rated 92 points by Cristaldi & Co., October 2025.)
Winemaking
Fermented in stainless steel tank and oak barriques for an average of 24 days. Partial malolactic conversion to retain acidity. Aged in large oak fermenter for 7 months.
Food Pairing
Pair with fresh seafood, especially sushi or sashimi, and crisp romaine salads with strong cheeses to top.
The Vineyard
Dell Valley Vineyard, Hudspeth County. Originally planted in 1987, the vines are thick and deeply rooted in the sloped sandy, caliche type soils of West Texas. Sitting outside of any currently designated American Viticultural Area (AVA), this vineyard is tended by Phillipe, whose experience with growing grapevines began at an early age on the French island of Corsica.
Dell Valley Vineyard, Hudspeth County (none, outside any designated AVA). Age of Vines: Over 12 years (originally planted 1987). Soil Type: Sandy loam over caliche with river rock. Elevation: 3,750 feet.
