Tasting Notes

Plump red fruits, aromatic spices, and damp earth comingle in the glass, where the smell is both deep and perfumed at the same time. The wine's aromas are luxurious, decadent, and focused - begging for a special moment. The palate is medium-full bodied, dry, and plush in texture.

Winemaking

Fermented in large oak fermenter for 16 days. Aged in 100% neutral oak barrels for 15 months.

Food Pairing

Pair with big flavors such as roast boar or lamb, mushroom tartlets, and Mimolette cheese.

The Vineyard

Hog Heaven Vineyard, established by Hank and Lyssa Seale in 2019 in Dripping Springs, Texas. Hog Heaven Vineyard is named for "a state of complete happiness," and in that vein the property is complete with a wedding venue, charitable shooting range, event space, and family retreat. In 2021 the Seales reached out to pioneering Texas grower Bill Blackmon to consult on Hog Heaven's vines.
