Tasting Notes

This wine is slow to open fully, but once it does, sweet tobacco, soft cedar, and red rose wade in aromas of plush red and purple fruit. The palate is taut, mildly tart, balanced by soft medium tannins - begging for food. Dry, supple, and nicely medium bodied. Well layered.

Winemaking

Varieties: 44% Aglianico, 30% Montepulciano, 26% Cabernet Sauvignon

Fermented in oak fermenters for an average of 15 days. Aged in 10% new French oak barrels and 90% neutral oak barrels for 24 months. 

ABV: 13.3% | pH: 3.75 | TA: 7.22 g/L | RS: 0.55 g/L 

Serve at 59°F | Decant

Food Pairing

rich, fatty pasta dishes such as a lamb bolognese, and semi-firm cheeses like young Ossau Iraty.

The Vineyard

AVA: Texas Hill Country

Formerly Hoover Valley Vineyard, this site was renamed to represent the spirit of our industry and the ancient geographic feature known as the Llano Uplift. This feature was born of magmatic eruption and erosion that, over time, exposed the pink granite "dome." The 55 acres, planted with 13 different southern French and Italian grape varieties, were planted amongst the granite starting in 2013. 

Uplift Vineyard, Burnet County, Texas Hill Country AVA. Age of Vines: 10 years. Soil Type: Decomposed granite with sandy loam pockets, and mineral. Elevation: 860-880 ft.
