Tasting Notes
"Aromas of white pepper, tart red berry fruit, violets, and wild herbs lead into a medium-bodied palate. Expressive wild herb character and blood orange acidity build across the palate, carrying through to a firm, tannic finish." - Review by Jonathan Cristaldi
Winemaking
Fermented in stainless steel tanks for 12 days. Aged in 25% new French oak barrels and 75% neutral oak barrels for 16 months.
Food Pairing
Pair with duck, soft ripened cheeses or a grilled Havarti, and other classic French Syrah pairings.
The Vineyard
In 2017 Johnny Sanchez and father-in-law Doug Wilcox planted 12 acres of Grenache, Mourvèdre, Syrah, and Tannat a stones' throw from Hye in Stonewall, Texas. The close proximity to William Chris allows for our team to work together to showcase the best fruit from this site, home to the limestone layers that run through the old Pedernales River Basin.
