Tasting Notes
Deeply floral: jasmine and acacia. The aromas are thick with a signature almondine pastry aroma. The fruit is tropical, with pineapple and savory papaya. The honey-nut characteristics are sure to increase with age in bottle. The palate is full-bodied, with a round richness and subtle smokiness.
Winemaking
Sauvignon Blanc - fermented in oak tank, concrete and neutral barrels for 28 days. Aged in a mix of large oak fermenter and neutral oak barrels for 6 months with bâttonage. Semillon - neutral oak barrel fermented (14 days) and aged for 8 months. Malvasia Bianca - fermented and aged in steel tanks.
Food Pairing
Pair with green bean-mushroom casserole, smoked turkey, honey ham, and peanut butter brittle.
The Vineyard
The Sauvignon Blanc grapes in this blend were planted in far West Texas in 1987, and this wine is our tribute to the shining characteristics of this famed white grape from the mineral soils at Dell Valley Vineyard. To compliment the old vine concentration this wine is matured in neutral oak barrels on the lees for a round texture. Originally planted in 1987, the vines at Dell Valley Vineyard are thick and deeply rooted in the sloped sandy, caliche type soils of West Texas. Sitting outside of any currently designated American Viticultural Area, or AVA, this vineyard is mightily tended by Phillipe, whose experience with growing grapevines began at an early age on the French island of Corsica.
Dell Valley Vineyard (5% Farmhouse Vineyard), Hudspeth County. Age of Vines: 35 years. Soil Type: Sandy loam over caliche with river rock. Elevation: 3,750 ft.
