Tasting Notes

The aroma is rich and full, with notes of freesia, ripe strawberry, cherry soda pop syrup, rhubarb, banana chips, and the scent of a cool breeze from spearmint leaf. The palate is bright and light-bodied, with a lingering ripe fruitiness and a thirst-quenching factor.

Winemaking

Fermented in stainless steel tank. Picked early for acidity. Bottled after 6 months in stainless steel tank.

Food Pairing

A dish with an acid component, such as a tuna niçoise with a dijon vinaigrette.

The Vineyard

Texas High Plains AVA

La Pradera Vineyards

Owned by Mike and Barbara Paddack and Andy and Lauren Timmons, who also own the 18 acres of Timmons Estate Vineyard in the same County. The over 100 acres of vines at La Pradera are planted on a special soil combination: calcareous, organic, Amarillo sandy loam soil over limestone. Both sites are dedicated to grapes that can grow sustainably in the semi-arid conditions of the Texas High Plains.
