Winemaking

VARIETIES: 25% Malvasia Bianca, 22% Sauvignon Blanc, 20% Muscat Canelli, 16% Muscat Blanc, 11% Semillon, 6% Blanc du Bois

Fermented in 90% stainless steel tank for34 days, with 10% in neutral oak fermenter for 12 days. Blended and then aged in stainless steel tank for a quick 2 months before bottling

ABV: 12.3% | TA: 6.13 g/L | pH:3.35 | RS: 0.174 g/L

The Vineyard

Dell Valley Vineyard, Farmhouse Vineyards, Twin T Vineyard, Darst Ranch VineyardThis wine sources grapes from three corners within the state of Texas, from one of the furthest West, to the East, and from the Texas High Plains. The high elevation out West is prime for coaxing balance out of the majority of white grape varieties of Texas, while Darst Ranch Vineyard in Austin County far East is planted solely to Blanc du Bois, which can withstand the humid and warm conditions there. Together, they all represent all of Texas.

Dell Valley Vineyard, Farmhouse Vineyards, Twin T Vineyard, Darst Ranch Vineyard, Texas (West Texas, Southeast Texas, Texas High Plains). Age of Vines: Varied. Soil Type: Varied sandy loam with some limestone and clay. Elevation: Average 600-3,800 ft.
