Tasting Notes
Refreshing and crisp, with notes of fresh pear and crisp green apple. Nice, bright acid and light, but noteworthy bubbles on the palate. Nuances of soft honeysuckle and fresh flowers come out as the wine opens. Just under medium bodied.
Winemaking
100% Chenin Blanc
Method: Ancestral. Fermented in stainless steel tank for 29 days. Bottled at the end of fermentation to capture natural carbonation. Undisgorged.

The Vineyard
This vineyard was originally planted in 1987. The vines at Dell Valley Vineyard are thick and deeply rooted in the sloped sandy-caliche type soils of West Texas. Sitting outside of any currently designated American Viticultural Area, or AVA, this vineyard is mightily tended by Phillipe, whose experience with growing grapevines began at an early age on the French island of Corsica.
