Tasting Notes

Dense plum puree aromas are thickly woven with rose, gravel, and strawberry smoothie. The palate is akin to the nose, with a full, rich texture that coats and develops into cinnamon bark, apple skin, and slate. In a word - decadent.

Winemaking

Fermented in large oak fermenter for 16 days. Extended maceration for 12 more days. Aged in 25% new French oak barrels and 75% neutral French oak barrels for 25 months.

Food Pairing

Pair with a grilled lamb chop, balsamic-glazed pork tenderloin, or soy-based egg noodle dishes.

The Vineyard

La Pradera Vineyard, Texas High Plains AVA, Terry County. Established in 2010 by Mike and Barbara Paddack with the help of Texas grape-growers Andy and Lauren Timmons, who also currently manage the 120 acres. The different grape varieties are planted on a special soil combination that is calcareous, organic, sandy loam over limestone that is just 2-3 feet deep in some blocks. The wines are aromatic and fresh in style.

La Pradera Vineyard, Texas High Plains AVA, Terry County. Soil Type: Amarillo fine sandy loam over limestone. Elevation: 3,300 feet.
