Tasting Notes

Intriguing aromas of burnt firewood, red and black cherry, muddled tobacco, dried lavender, and cocoa. The nose is wildly aromatic, and the palate is rich and thick with a balance of tart wild blackberry, and earthy notes of leather. Full-bodied with silky tannins.

Winemaking

Fermented in stainless steel tank for 10 days. Aged in 100% neutral oak barrels for 30 months.

Serve at 59°F | Decant

Food Pairing

Pair with game and smoked meats such as braised lamb or duck gnocchi, or even escargot.

The Vineyard

 

AVA: Texas High Plains

 

Andy and Lauren Timmons established this 18-acre tract of land in 2012 in Lubbock County. It is devoted to grape varieties that have proven sustainability in similar semi-arid climates. The Timmons now manage three vineyards in the Texas High Plains AVA, including this Timmons Estate Vineyard which is now owned by Jeff and Rebekah Ratliff.

Elevation: 3,600 ft. Soil: Amarillo fine sandy loam over limestone base; high organic content. Age of vines: 7 years.
