Tasting Notes
Deep salmon in color, this dry wine has a thoroughly rich mouthfeel and medium body. Savory, herbal, mineral, with crunchy red berries and subtle rose. Nice dry finish.
Winemaking
Partial saignée and short maceration. A 35 day fermentation took place in stainless steel tank and concrete egg (Sangiovese), with some co-fermentation employed. Aged in stainless steel and concrete egg for 60 days separately and another 60 days together in stainless steel. Full malolactic conversion.
Food Pairing
This wine serves as a rich, creamy component to skin seared salmon and chicken parmigiana.

The Texas High Plains AVA is the second largest designated grape-growing region in Texas, spanning 8 million acres in the West, yet it is responsible for the majority of the wine grapes grown in the state. This is where co-founder William "Bill" Blackmon planted his first vineyards in 1984.
