Tasting Notes

The incredibly rich texture gives this wine a medium-bodied weight, and brioche and butter tones alongside the fruity character of the Grenache grape.

Winemaking

Directly pressed, short maceration. Fermented in concrete. Aged in concrete egg for 6+ months on bâtonnage. Full malolactic conversion.

Food Pairing

Seared pork belly with mofongo mash and butter-braised leeks.

AVA: Texas Hill Country

In 2016 Doug Wilcox planted 12 acres of Grenache, Mourvèdre, Syrah, and Tannat, just a stones' throw from Hye in Stonewall, Texas. The close proximity to William Chris Vineyards allows for our teams to work together to help the fruit showcase what is special about this particular site, home to the clay loam soil over limestone that runs through the old Pedernales River Basin.
