Tasting Notes

Velvety plum and gardenia, ripe sweet blackberry aromas, red peach, and cream waft up on an incredibly pleasing nose. The palate is just as dry and soft as you'd want, with edgy, fervent tannins that beg for a cut of steak or pasta dish. A lingering, fruity finish with almond notes.

Winemaking

Variety: 54% Montepulciano, 46% Aglianico. Fermented separately in large oak fermenter for 12 days. Aged for 28 months in 15% new French oak barrels and 85% neutral oak barrels.

Food Pairing

Pair with a Filet Mignon, or even a gamier cut of venison medallions in a wine jus.

The Vineyard

Veraison Hills Vineyard, Texas Hill Country AVA. Veraison Hills Vineyard is planted at the foot of hills that once served as Mica mines, over the Hickory aquifer. The grape varieties planted in the well-drained soil are Mediterranean varieties that thrive in the Texas climate. Originally planted in 2016 in San Saba County, Mike and Dianna Dickey now own 20 acres of land planted to hardy grape varieties that thrive in the warmth and humidity of the Northeast Texas Hill Country AVA. Their well-drained soil is crucial to ensuring the success of the grapes, making this a thoughtfully selected single-vineyard site.

Elevation: 1,204 ft. Soil: Deep sandy soil over the Hickory aquifer. Age of vines: 4 years.
