Tasting Notes
A wine with great color that opens with savory caramelized notes, roasted cashews, red apple, cherry syrup, the rich sweetness of bacon, prune, fig, black plum, sarsaparilla, and red licorice. An amazing tannic grip, with a fresh full-bodied palate - juiciness laced with smoke.
Winemaking
Variety: 100% Tempranillo
Fermented in stainless steel tanks for 14 days. Aged in 10 new French oak barrels and 5% new American oak barrels for 17 months.
ABV: 15.5% | TA: 6.30 g/L | pH: 3.96 | RS: 1.7 g/L
Serve at 59°F | Decant
Food Pairing
a juicy burger, gamey meat optional, but a sharp cheddar is a must.
The Vineyard
AVA: Texas High Plains
Established in Yoakum County by the Newsom family, they now have about 150 acres of quality fruit in flat, semi-arid conditions. Neal Newsom, who grew up in Yoakum, came from a long line of cotton farmers. With cotton as a thirsty crop, requiring more water than Texas often has to give, he looked toward alternative crops and settled on growing high-quality grapes from their dry, shallow, poor soils that cause grapes to struggle.
Elevation: 3,700 ft. Soil: Shallow, low-vigor sandy loam. Age of vines: 29 years.
