Tasting Notes

Dry, medium-bodied, and aromatic. Cherry rollup and anise, with red rose petals boasting out amongst nutmeg, walnut, and vanilla hints. The palate is incredibly well-balanced, and velvety smooth in texture, filling the whole mouth with lush fruity notes.

Winemaking

Variety: 100% Sangiovese

Fermented in large oak tank. Aged in 10% Hungarian oak barrels and 90% neutral French oak barrels for 18 months.

cow's milk semi-firm cheese, and juicy dishes as ragú or meatballs.

The Vineyard

AVA: Texas Hill Country

Salt Lick Vineyard was established in 2006 in Dripping Springs, Hays County. It is planted with a range of heat-loving black grape varieties that also favor the alluvial soils of the site. Vineyard manager Jay Knepp uses sustainable practices on the 50 acres he farms. Passionate about wine grapes from an early age, his second passion is pairing the right wine with Texas BBQ
