Tasting Notes

Wild blackberry opens the nose, with cinnamon, granite, savory notes and brambly fruit. More wistful aromas of deep violet, rosemary, and white tea balance out stronger notes of grilled plum. Surprisingly firm tannins, a touch of heat, and great balance. Full-bodied.

Winemaking

Varieties: 57% Mourvèdre, 43% Syrah

Partial field blend fermentation. 12 days on skins, stainless steel fermentation. 100% neutral oak barrel aging for 18 months. 

ABV: 13.6% | pH: 3.68 | TA: 6.1 g/L | RS: 1.02 g/L 

Serve at 59°F | Decant Gently

Carpaccio, rare elk loin, and duck confit potatoes.

The Vineyard

AVA: Texas Hill Country

Salt Lick Vineayrd was established in 2006 in Dripping Springs within Hays County. It is planted to red Rhône varieties, and Tempranillo, that not only succeed in the alluvial soil of the site, but in the warmth of the area. Vineyard manager Jay Knepp uses sustainable practices on the 50 acres he farms. Passionate about wine grape from an early age, his second passion is on pairing the right wine with Texas BBQ. This Mourvèdre-Syrah blend may be the perfect example. 

Elevation: 1,000 ft. Soil: Rocky alluvial soil. Age of vines: 14 years.
