Tasting Notes
Plum, dragonfruit, evergreen, bramble, violets, flint, mineral, gravel on the noes. Dripping with a thick, velvety texture, dried violets, dried orange, plum and black tea on the palate. Full-bodied, high, ripe tannins and lingering dusty rose finish. In a word: decadent.
Winemaking
A 24-hour cold soak. Fermented in large oak fermenter for 9 days. Aged on lees for 11 months. Aged for 29 months in neutral French oak barrels.
Food Pairing
Pair with a full-bodied dish like charred beef tips, lamb, or flavorful barbecue!
The Vineyard
La Pradera Vineyard, Texas High Plains AVA. Established in 2010 by Mike and Barbara Paddack with the help of Texas grape-growers Andy and Lauren Timmons, who also currently manage the 120 acres. The different grape varieties are planted on a special soil combination that is calcareous, organic, sandyloam over limestone that is just 2-3 feet deep in some blocks. The wines are aromatic and fresh in style.
Elevation: 3,300 ft. Soil: Amarillo fine sandy loam over limestone base. Vines planted in 2010.
