Tasting Notes
A deep, dark nose of kirsch and wild blackberry, cacao, rosemary and tobacco leaf, drenched with flint and smoke notes. Decant to unveil elegant rose and jasmine notes. The silky coating tannins are luxurious on a velvety full-bodied palate that finishes subtly - without heat.
Winemaking
Fermented in large oak fermenter after a 3 day cold soak. Fermented for 6 days at 92°F. Aged for 14 months in neutral French oak barrels.
Food Pairing
Pair with playful, flavorful dishes - eggplant parmesan, fried quail, and balsamic glazed meats.
The Vineyard
Newsom Vineyards, Texas High Plains AVA. Established in Yoakum County by the Newsom family, who now have about 150 acres of quality fruit growing in the flat, semi-arid conditions there.
Elevation: 3,700 ft. Soil: Shallow, low-vigor sandy loam. Vines planted in 1990.
