Tasting Notes
Beautifully balanced and medium-full bodied, with chocolate and mint aromas surrounded with strawberry jam and black cherry. This wine has a stellar perfume that opens up to black tea, bergamot, and potpourri. The wine has meltaway tannins and vanilla notes from oak aging.
Winemaking
Fermented in large oak foudres for 9 days. Aged for 29 months in 10% new French oak barriques and 90% neutral French oak barriques.
Food Pairing
This is a rich wine for a rich dish - gamey, potato-based, cheesy dishes should be stunning with this wine!
The Vineyard
The Texas Hill Country is the largest of the eight American Viticultural Areas of Texas, spanning 9 million acres. Incredibly diverse, the vineyards from where these grapes were sourced are perched on the Llano Uplift, a billions year old dome of granite with alluvial topsoil. This dome covers the top 2 million acres of the Texas Hill Country, including Bell Mountain AVA. Soil: highly varied - decomposed granite, sandstone, hickory sand, calcareous, loam, and clay. Elevation: 700-2,400 ft.
