Tasting Notes
The aroma is deep violet and black stone, turned earth, and plum, with fresh baked bread, lavender candy, and breeze. Whiffs of vanilla bean, guajillo chili, sweet anise, and black pepper. The palate is uplifting with grace and restraint in the integrated oak. Med + tannins.
Winemaking
Fermented in large oak fermenter for an average of 9 days. Aged in 20% new French oak barrels, 5% new Eastern European oak barrels, and 75% neutral barrels for 36 months.
Food Pairing
Pair with flavorful dishes like chicken pot pie, black eyed pea stew, or even boeuf Bourguignon!
The Vineyard
Established in 2015 in Mason County around his home, owner and vineyard manager William Blackman planted what he loves - Cabernet Sauvignon, Merlot, Malbec and Petit Verdot. These "Bordeaux" varieties thrive on the slightly sloping, poor soils of Blackmon Ranch that also reflect sunlight onto the grapes to increase intensity. Soil: poor, shallow soils; sandy loam over clay to sandstone. Elevation: 1,800 ft.
