This is a very flavorful wine. That classic cherry flavor comes through in spades. A dry wine with great acidity and very pleasant and integrated tannins. A medium body wine with pronounced aromatics and a lengthy finish.
Winemaking
Winemaking Details: Primary fermentation in 100% stainless steel tanks. Malolactic fermentation in a combination of an oak fermenter and 100% neutral oak barrels. Aging Information The entire lot was racked clean and allowed to age in 100% neutral oak for 14 months. 13 full pallets and 1 partial pallet produced on 6/24 (758 total cases).
Food Pairing
Cast-Iron Pizza with Fennel and Sausage
Why is Sangiovese and/or Chianti (Sangiovese based) such a food friendly wine? It doesnt overpower! With exception to the once quality you want to be quite high in a table wine, acidity. Its got that racing and refreshing acidity to refresh and cleanse the pallet, while the tannins play a supporting role unlike the monster steak house wines. If you haven't cultivated a wine on the dinner table habit yet, then this is the wine to help you break that habit.
The Vineyard
Lahey Vineyards, named for the community of farmers in the Texas High Plains where the owners family has farmed for decades, are one of the biggest and best in Texas. Their success has played an important role in the Texas Wine Industry, proving quality fruit to over a dozen Hill Country Wineries.
