Uh, what? When you taste the wine you will get it. You will get a balsamic vinegar like punch from the Petite Verdot. It may not seem like a lot, only 7% of the blend, but its nearly double the amount of Petite Verdot uses in the classic Bordeaux blends. They used like 3%, 3.5%, 4%. Crazy people use double digit. Some spices (and some wines) have flavors that go a long way. This dish has a classic protein with milliard reactions giving that umami and protein foundation. That pomegranate seeds (not mentioned) actually give a crunch and touch of bitterness, that contracts the sweet and bitterness from the orange peel, and the mint is the bridge.
