2017 Enchanté

This wine is pure elegance. The nose opens with notes of acacia, clove, and vanilla which give way to rose, strawberry, ripe black cherry, raspberry, rhubarb, cigar, blackberry, and chocolate. These notes are echoed on the palate with very smooth tannins.

Varieties: 56% Cabernet Sauvignon, 41% Merlot, 3% Petit Verdot

After harvest, the wine was fermented in a combination of bins and an oak fermenter. After pressing, the wine was aged for 18 months in 25% new French oak barrels.

This is the first year the winemakers chose to make a Cabernet Sauvignon heavy blend. Fruit from additional Hill Country vineyards was introduced adding more layers and complexity to the wine. A splash of Petit Verdot finishes the blend and adds depth of color and roundness to the wine.
