Fermented in stainless steel for 14 days. Extended maceration for 24 days. Aged 24 months in 25% new French oak and 75% neutral French oak.

Food Pairing

Soft cow's milk cheeses, seared elk loin medallions, white bean soup, or a plate of beef fajitas.

The Vineyard

Originally planted in 1987, the vines at Dell Valley Vineyard are deeply rooted in the sloped sandy, caliche type soils of West Texas. Sitting outside of any designated American Viticultural Area, this vineyard is tended by Phillipe, whose experience with growing grapevines began at an early age on the French island of Corsica. Soil: sandy loam over caliche with river rock. Elevation: 3,750 ft.
